What Makes the Temperature Wander
A cabinet holds a steady temperature only when the control reads it correctly and the cold air stays where it belongs. The most common cause of drift is a thermistor, the small sensor that tells the board how cold the box is; when it reads high or low, the system over- or under-cools. A stuck air damper between the freezer and fresh-food sections lets too much or too little cold through. A tired door gasket bleeds cold air and pulls in warm, humid room air. And a control board that mis-times the cycle keeps the temperature hunting. We measure the actual cabinet temperature against what the display claims, then test each of these in turn.

Sub-Zero: dual sealed systems mean each section is controlled separately, so drift on one side points to that section's sensor, damper or fan rather than the whole machine.
Wine units, including Sub-Zero and True Residential: tighter tolerances and less mass make them sensitive to a warm room and a weak seal; small faults show as visible drift.
Liebherr: may raise a temperature alarm or E-code when a sensor drifts; we read it and confirm against a measured temperature.
Thermador, Bosch and Monogram: often surface a service message; the real cause is usually a thermistor, damper motor or board.
Viking: pro refrigeration diagnosed by measured behavior; sensors, dampers and condenser condition drive most swings.
